Students develop nutritional supplement for child athletes in Zulia

A group of students from the Territorial Polytechnic University of Maracaibo (UPTMA), in the state of Zulia, developed an innovative nutritional supplement aimed at athletic girls and boys, in collaboration with the Zuliano Institute Foundation for Technological Research (INZIT), an entity attached to the Ministry for Science and Technology (MinCyT).
Lentil, rice and cocoa shell flours were used to make this supplement, with the aim of providing a nutritious and sustainable alternative that improves the diet of children who participate in sports activities.
The young students, who do internships at the INZIT Foundation in the Coordination of Agrifood and Environment, work on the dehydration of lentils and on the evaluation of temperature to optimize the conservation of nutrients. They also perform calculations to determine the moisture and ash content in the flours used.
Under the supervision of researchers from the INZIT Foundation, students have identified that the combination of lentil, rice and cocoa shell flours is rich in protein, fiber and antioxidants, making it a valuable option for a balanced diet.
